Skinny Greek Omelette

Ingredients: 2 eggs 1/2 cup spinach 1/2 cup diced tomatoes 1/2 cup diced peppers (any) 1 tbs. feta cheese salt/pepper Directions: Start by cooking all veggies in a pan with a little cooking spray.  When the veggies are tender, remove from pan to a separate plate.  In a bowl, scramble two eggs, then pour into the pan used for veggies.  Cook enough on one side, so that you can flip it. Once flipped, pour feta cheese and veggies on top.  Let cook for 2-3 additional minutes, or until cheese is beginning to melt.  Fold one half of the egg onto the other.  Season with salt and pepper to taste. Optional: Top with 1 tbs. plain greek yogurt
