Thin Mint Shakeology Truffles


1/2 cup rolled oats

2 scoops chocolate Shakeology

2 tsp. mint extract

10 tablespoons water

Dark cocoa powder


Run rolled oats through a food processor until smooth.  Pour into a bowl and add the rest of the ingredients.  Continue stirring the mixture until everything is well mixed and it forms into a “doughy” ball.  Form into ping-pong sized balls, rolling in hands, then roll in cocoa powder to prevent from sticking.  Place onto parchment paper and put into refrigerator for at least 30 minutes to set.  Store in a covered container in the refrigerator.
