If you are looking for a crowd pleasing side-dish that is also healthy, look no further! These beans took just a few minutes to prepare and less than 15 minutes to roast. They pair perfectly with any dish, or are delicious as a snack or small meal on their own!
Ingredients:
1 lb. fresh green beans (thin beans preferred, but any type will work)
5 large cloves garlic, peeled and cut into thin slices
1 tsp. salt (or less)
fresh ground black pepper
1/4 cup parmesan cheese
Olive oil cooking spray
Instructions:
Trim ends from green beans. Use cooking spray on a large cookie sheet and lay the beans in one layer. Spray roasting pan with nonstick spray then arrange the vegetables in a single layer. (I like to cover the pan with foil, then spray the foil for even easier clean-up.) Spray the top of the beans with nonstick spray, so everything sticks, then sprinkle the garlic, salt, pepper and parmesan over the beans. Roast 12-15 minutes for thin beans, or slightly longer for regular beans, until beans are slightly shriveled, and garlic and parmesan is lightly browned.
