Protein Cookie Dough Bites

I hope you are ready for a treat!!  These cookie dough bites are da bomb!  They have just a few ingredients, are quick and easy to make and husband approved. I made up a batch of these before I leave for a girls vacation. They are one of my husbands favorite treats and he can take them to work and hunting for a quick snack. It makes me feel good knowing that the Shakeology  in them has a TON of vitamins and nutrients in it, considering his diet will likely consist of frozen pizzas while I’m gone.

 

COOKIE DOUGH “BASE”

Makes approx. 12 balls

INGREDIENTS: 

1 cup chocolate Shakeology 

1/2 cup nut butter

 

1 overripe banana

Cold water

 

Begin by mashing the banana, then add Shakeology. Mix well, then add nut butter. Continue mixing until nut butter is mixed in well, then add water a few tablespoons at a time until the consistency is like cookie dough. Roll the dough into about 1 inch balls (about 1 tbs. of dough) and place onto a cookie sheet. Refrigerate for at least 30 minutes, and also store in the refrigerator. You can transfer to baggies or to a tupperware dish once they are set.

 

NOTES: I made 2 batches of the cookie dough. I made 12 each of the Monster Cookies and Almond Joy.

 

MONSTER COOKIE DOUGH:

Mix in 1/2 cup trail mix to the base, then roll into balls. 

 

 

ALMOND JOY COOKIE DOUGH:

Put about 1/3 cup coconut shreds onto a plate. Once you roll the balls, roll in the coconut shreds until the entire ball is coated. 

 

 

There are SO MANY options for these tasty treats!  In the past I have added almond slivers, or other crushed nuts, chia seed, a few drops of mint extract for Girl Scout Cookie Dough…the possibilities are endless!
