Black Bean Tacos



Black Bean Burrito


  • 1/2 cup low-sodium black beans
  • 1/2 tomato
  • 1/4 green bell peppers, medium
  • 1 1/2 teaspoons extra virgin olive oil
  • 1 teaspoon fresh cilantro
  • 1 small corn tortilla
  • 1/2 tbs shredded cheddar cheese
  • 2 tablespoons pico de gallo

**Optional: Add cubed, roasted sweet potato


  • Drain and rinse black beans. Wash and chop tomato and bell pepper.
  • In a small bowl, combine black beans, tomato, bell pepper, olive oil, and cilantro (chopped). Mix lightly.
  • Spoon black bean mixture onto tortilla; top with cheese and pico de gallow. Roll and enjoy.
