Black Bean Burrito
Ingredients
- 1/2 cup low-sodium black beans
- 1/2 tomato
- 1/4 green bell peppers, medium
- 1 1/2 teaspoons extra virgin olive oil
- 1 teaspoon fresh cilantro
- 1 small corn tortilla
- 1/2 tbs shredded cheddar cheese
- 2 tablespoons pico de gallo
**Optional: Add cubed, roasted sweet potato
Preparation
- Drain and rinse black beans. Wash and chop tomato and bell pepper.
- In a small bowl, combine black beans, tomato, bell pepper, olive oil, and cilantro (chopped). Mix lightly.
- Spoon black bean mixture onto tortilla; top with cheese and pico de gallow. Roll and enjoy.
