Zucchini Bread

80 Day Obsession/21 Day Fix: 1/2 Green, 1 Red, 1 Yellow 1 tsp
Ingredients
- 6 cups shredded zucchini (peeled first)
- 1.5 cup rolled oats
- 12 eggs, slightly beaten
- 4.5 tsp baking powder
- 6 tsp cinnamon
- 1 tsp nutmeg
- 3 tsp vanilla
Directions
- Preheat oven to 350 degrees.
- Spray a 9×9 baking dish with cooking spray.
- Combine all ingredients in a bowl.
- Pour batter into dish and bake for 20-25 minutes or until golden brown on top. (Insert a toothpick in the center to make sure it’s cooked through)
- Let cool, then cut into 6 squares. One serving is one square.
- Add 1 tsp of nut butter or butter (1 tsp).
- Keep refrigerated up to one week.
Thanks fo the recipe! They were just what I need at 4:30 in the morning preworkout! I am making them again this coming week. However, you list these as 1/2 green, however, shouldn’t it be a full green with 6 cups of zucchini for 6 portions?

Hi! I made these again because I absolutely love having my breakfast ready for me for an early morning workout, and it makes life so much easier! I was so excited about them and the 80 DO carrot bread that I bought mini bread loaves off of amazon and it makes it even easier to have one whole loaf ready for me in the morning. However, every time I make them, they take closer to 40 mins than 20 mins. Thanks for the recipe!!!!
I guess I should have read further before making them. I baked 30 minutes and still gooey on the inside but taste good. I’ll make them again.

This was way better than expected!!! May add shredded coconut and walnuts next time and add a orange and blue container count. Have you ever tried it with half whole egg and half egg whites?
