Pumpkin Pie Baked Oatmeal

Ingredients:

12 Eggs

3 cans of Pumpkin Puree

2 Cups Oats, old fashioned, dry

6 tsp. Baking powder

3 Tbs. Pumpkin Pie Spice

3 tsp. Vanilla extract

 

Directions:

  1. Whisk 12 eggs in a large bowl.
  2. Add the spices and vanilla extract to the eggs and continue mixing.
  3. Add the oats.
  4. Pour the batter n a sprayed 9×13 glass baking dish and bake at 350 degrees for 45 minutes, or until you can insert a toothpick in the center and it comes out dry.

 

Serving Sizes:

If you are following the 80 Day Obsession or 21 Day Fix programs, this makes 6 servings. Each serving has 1 green, 1 red, and 1 yellow container.

  1. This sounds delicious! Wouldn’t it be one purple instead of a one green since pumpkin puree is counted as a purple in 80 Day Obsession?

      1. Made with 8 eggs and 4 egg whites (184g) to better fit my macros- turned out great! Only problem- my little ones loved it so much that I had less meals prepped😂
