Cheeseburger Fried Rice
Ingredients
1 pound ground beef
1-3/4 cups water
2/3 cup barbecue sauce
1 tablespoon prepared mustard
2 teaspoons dried minced onion
1/2 teaspoon pepper
2 cups riced cauliflower
1/3 cup chopped dill pickles
1 cup chopped lettuce
In a large skillet over medium heat, cook beef until no longer pink; drain. Add the water, barbecue sauce, mustard, minced onion and pepper and stir for 1 minute. Remove from skillet and set aside.
Reduce heat; Add the riced cauliflower, cover and cook for 5 minutes. Add the meat mixture back in and cook for another 5 minutes, stirring frequently. Add pickles and lettuce, toss and serve immediately.
Top with cheese, avocado, tomatoes, bacon, or any other burger toppings you love!
