Pumpkin Protein Mug Cake

Tis the season! Leaves are falling, PSL is in full force and I’ve been craving a pumpkin bar, like BAD! You know the ones with cream cheese frosting? I decided to play around with a few ingredients I had at home and was able to make a healthy, protein-packed version! 


INGREDIENTS:
1/4 cup pumpkin purée 

1 scoop vegan vanilla Shakeology 

1 egg2 tbs unsweetened almond milk 

1/2 tsp baking powder Dash of pumpkin pie spice 


OPTIONAL-2 tbs mini chocolate chips, pecans, or walnuts.

DIRECTIONS:
Combine all ingredients in a mug and microwave for 2 minutes. Whipped topping optional!
