
I recently made this amazing grilled chicken and peach salad, and it was to die for! I began by grilling chicken breasts and peaches cut in half, with their seed removed. Once the chicken was done, I cut it up, along with the peaches, into bite sized pieces and placed it in a bowl of chopped lettuce. I added red onion, toasted pepitas, goat cheese and quinoa.
The dressing was one on my go to’s and good on literally anything.
Ingredients
3 tbsp extra-virgin olive oil
3 tbsp white wine vinegar (lemon juice works too!)
3 tbsp Dijon mustard
2 tsp pure maple syrup or raw honey
Salt and pepper to taste
