Bruschetta Pasta


4 cups cooked pasta

1 – 2 Tablespoons olive oil

1 Tablespoon balsamic vinegar

1 teaspoon minced garlic

1 1/2 cups diced tomatoes

1/4 cup diced red onion, optional

1/2 cup basil, loosely packed

Parmesan cheese to taste (optional)


Start by cooking the pasta as directed on the box. You are welcome to use whatever pasta you would prefer. While the pasta is cooking, cut up your basil, tomatoes, and onions. If you are using fresh garlic, go ahead and mince it. Once the pasta is done, drain and then toss in the Balsamic vinegar and olive oil. Toss the pasta and then taste. Add more or less of each to fit your preference. Add in the garlic, tomatoes, onions, and basil. Stir and then top with parmesan cheese. Serve up this Bruschetta pasta salad warm or refrigerate it and store it cold.
